Our story Begins

Gallio is a London-based restaurant embodying the spirit of the Mediterranean. Our journey began with a quest to craft a better tasting pizza which lead us to explore the history of flatbreads. We uncovered stories of Persian soldiers baking flatbreads on their shields and topping them with fresh local ingredients.

Drawing inspiration from these stories, we’ve developed a unique, delectable, and nutrient-rich dough using ancient grains. Our menu includes homemade flatbreads, breadsticks, filled pittas, and pizzas. We celebrates the Mediterranean’s culinary diversity while giving classic dishes an innovative twist. Crafted with the freshest ingredients and catering to diverse dietary preferences, we offer vegan, halal, gluten-free, dairy-free, and nut-free options. What Mediterranean means to us...

Upon first glance, obviously one might assume that “Mediterranean” simply refers to our goal of combining dishes like patatas bravas and lamb kofte under one roof. However, the Mediterranean region is a diverse collection of countries connected by water, as illustrated by the map below. Yet to us, the Mediterranean embodies more than just geography. It symbolises freshly prepared food, the vivid hues of ripe ingredients, and the lifestyle that cherishes sharing meals with loved ones in an atmosphere of laughter and delight.

Ancient Grain Dough

Our team is passionate about crafting dough that stands out in terms of history, flavour, and a low carbon footprint. Therefore we use ancient grains for their superior taste and digestion-friendly properties. 

Unchanged for centuries, ancient grains like Einkorn, Emmer, and Spelt form the basis of our signature dough recipe. Moreover this dough is transformed into a unique assortment of pizzas, flatbreads, and house breadsticks on our menu that will leave your taste buds craving more!

Indeed, We embrace the Mediterranean lifestyle, which encourages us to enjoy fresh, flavourful meals in a social dining setting with loved ones. Hence, our philosophy revolves around simplicity, cherishing life’s pleasures, and laughter.
