Socca - Chickpea Flatbread

  • 150g of Chickpea Flour/Gram Flour
  • 300ml of Warm Water
  • 30ml Extra Virgin Olive Oil (plus a bit more for the pan)
  • 1 teaspoon of Sea Salt
  • A pinch of Black Pepper
  • 1tbsp Oregano
  1. Mix It Up: In a bowl, combine the chickpea flour, warm water, olive oil, salt, and a pinch of black pepper. Stir it all together until you have a smooth batter. It should have the consistency of heavy cream. If it’s too thick, feel free to add a bit more water.

  2. Let It Rest: Cover the bowl with a cloth and let the batter rest for about 30 minutes.

  3. Heat the Pan: Lightly grease a frying pan with some olive oil and add a medium heat.

  4. Pour In The Batter: Ladle in some of the batter, swirl it around to spread evenly like a crêpe. It should sizzle a bit – that’s the sound of deliciousness in the making!

  5. Cook It: Cook for about1-2 minutes on each side until lightly coloured. Repeat with the rest of the mixture.
